Chicago is forever tied to Al Capone, yet even his empire relied on quiet corners. In Cicero, a small speakeasy disguised as a bakery held barrels of bourbon behind sacks of flour. Patrons paid extra not for the bread, but for the illusion of legality. Capone’s accountant ran the finances; raids were theatrical, timed to allow photos of smashed bread but leaving liquor untouched.

Here, protection was predictable. Muscle secured the doors. Police received their cut weekly. Patrons received jazz, cocktails, and the reassurance of safety. Chicago’s speakeasy network thrived under a mixture of fear, respect, and excellent pastries.
